Dedicated to the study of the human immune system for over 30 years, Dr. Bukowski began his research career in 1974, while an undergraduate student at Johns Hopkins University to ultimately hold a post as Assistant Clinical Professor of Medicine at Harvard Medical School. Dr. Bukowski is an advisor to the Department of Defense on matters of bioterrorism readiness, and has spent the majority of his career researching the specific factors that encourage a strong, healthy immune system. He has authored over 100 research articles, abstracts, and review articles for many scientific journals, newspapers, and magazines such as Time, US News and World Report, National Geographic, and Discovery and has been featured on Today, Good Morning America, and CNN News.

In 2005, Dr. Bukowski founded the Nutritional Science Research Institute to incorporate his impressive research discoveries into developing products for better health. In 2008, NSRI will conduct a double-blind, placebo-controlled clinical trial that will explore the antioxidant, anti-inflammatory, immune-enhancing and pH balancing effects of the original Greens Plus formula. Dr. Bukowski will direct the project in conjunction with Dr. Sue Percival, Professor of Food and Nutrition Science at the University of Florida.

Valerie Berkowitz

Valerie J. Berkowitz, M.S., R.D., C.D.N., C.D.E.

Valerie J. Berkowitz, M.S., R.D., C.D.N., C.D.E., is a licensed registered dietitian, certified diabetes educator and certified lifestyle counselor practicing for over 15 years. She is the Director of Nutrition and Health Coach at the Center for Balanced Health and a board member of The Metabolism Society. Prior to this, Valerie worked as a nutritionist at The Atkins Center for Complementary Medicine (ACCM).

While employed at The Atkins Center for Complementary Medicine, her efforts focused on bridging the gap between conventional and complementary nutritional practice and included educating patients, mentoring nutrition students, speaking at events for consumers and health care professionals, in addition to assisting in research efforts. These efforts helped her gain invaluable scientific and practical understanding of the intricacies of controlled carbohydrate nutrition plans and the beneficial medical implications.

Ms. Berkowitz was also a clinical dietitian for the Long Island Jewish Medical Center/ Schneider Children's Hospital. She completed an internship at Camp Shane, a retreat for overweight children, in Ferndale, NY

Valerie acted as a reviewer for"The Sweet Truth about Managing Type 2 Diabetes", published by Pritchett & Hull Associates Inc., in 2004, created a quarterly column for diabetes educators and was published in the monograph, "Managing the Patient with Diabetes." Ms. Berkowitz received her B. S. in Nutrition from the University of Rhode Island and her M.S. in Nutrition from New York University.


Keith Berkowitz

Dr. Keith Berkowitz

Dr. Keith Berkowitz's background combines medical and nutritional expertise. He worked with Dr. Robert Atkins as Medical Director of the Atkins Center for Complementary Medicine. In 2003, he founded the Center for Balanced Health, a medical practice specializing in the prevention and treatment of obesity, diabetes, heart disease and other metabolic conditions. He also co-founded American Functional Foods and R & B Foods. He also is a member of the Scientific Advisory Board of the National Foundation for Celiac Awareness.

He received his Doctor of Medicine from the New York Medical College and his Masters in Business Administration from Columbia Business School. Dr. Berkowitz did a combined internship and residency in Internal Medicine at North Shore University Hospital and Memorial-Sloan Kettering Cancer Center.

Dr. Berkowitz has been featured in Men's Health, AARP Magazine, Low Carb Living, Newsweek, New York Magazine, Newsday, The Sunday London Times, Associated Press, CNN, INC Magazine, am NY, Wins 1010 online and The New York Post. Additionally, he has been featured on ABC News, WOR Radio, WKDA radio and WCBS radio. Dr. Berkowitz is co-author of The Stubborn Fat Fix (Rodale Press, April, 2009).


Travis Illian

Travis Illian, MA, SPN, SCCC, CSCS, USAW

Travis Illian, MA, SPN, SCCC, CSCS, USAW, is a specialist in performance nutrition and certified nationally and collegiately as a strength and conditioning coach. He is certified in functional movement screening (FMS) and active isolated stretching (AIS) and has received a USATF Level I Track and Field coaching certification.

Travis received his MA from the University of Alabama in Human Performance and is currently pursuing his PhD from the University of Alabama in Exercise Science. His interest of study includes proper biomechanical movement patterns that lead to improved performance and health.

Travis published “Omega-3 Chia Seed Loading As A Means of Carbohydrate Loading” in the Journal of Strength and Conditioning Research and has also completed studies using the Master Amino Acid Pattern (MAP). He is currently writing “Performance Nutrition: Habits of the Healthy and Elite”, a dietary guide and cookbook for athletes.

Travis is currently serving as an assistant strength and conditioning coach at the University of Alabama and has previously served in the same capacity at Mississippi State University and in the private sector.
